- Badam burfi. Made with toasted almonds, sugar and cardamom used in powdered form. It is completely beginner friendly and does not require any milk or ghee, the recipe is vegan. You will need:
- Half cup of almonds
- 2 tbsp of sugar
- ¼ tbsp of cardamom powder
- ¼ tbsp of water
- 1 tbsp of chopped pistachios
- 1tbsp of oil or butter or ghee to grease
1. Begin by boiling a cup of water on medium heat and add almonds to it. Let them boil in the heated water for 2 minutes but no more than that.
2. When done boiling, cool down for a couple of minutes Rinse the almonds under cold water using a strainer and drain off the water completely.
3. Slowly peel off the skin and air dry them to remove the moisture completely. To ease the drying you can toast them in a pan on low heat so that all the water evaporates from them.
4. Now take them in a blender and blend them to make a powder but not too much as they will release oils, the mixture needs to be dry and rough. Blend them until finely powdered stage is achieved.
5. Take 2 tbsp or preferred amounts of sugar in a pan and add a cup of water to make sugar syrup. bring the syrup to a boil. Add the almond powder and cardamom powder on low flame and stir the syrup mixture till it leaves the sides of the pan or utensil.
6. After the mixture turns thick and leaves the pan, take ¼ of the mix and keep it aside to cool. Take some oil or butter or ghee preferably on to your fingers and grease them. Roll it into a ball and make one that is not sticky.
7. If it is, then cook it further. Transfer the ball onto a greased plate or parchment paper if you have it and knead it slowly whe it still is warm as it will not be good enough once it cools down and hardens.
8. Form a smooth dough like texture and cover it with some parchment paper. Roll with a rolling pin to get the thickness you want while adding chopped pistachios and when it is slightly warm and soft, cut small squares from it and cool it for an hour.
9. Keep it in the fridge and use as you want. A tip here is to add a tbsp of ghee or oil if the mixture does not leave the pan. You can use store bough almond powder as well and if you prefer it less sweet use only half cup of sugar. If the mixture does not thicken on the parchment paper, cook it further.
