Frosting, also called as icing, is sweet made up of sugar with liquid such as water or milk i.e., enriched with butter, egg whites, cream cheese and flavouring. Frosting made with shortening is much more stable and tends to have a greasier effect. The recipe below contains two part butter and one part shortening. You can also use equal parts of both butter and shortening, if you prefer.
Required:
- 500 grams unsalted butter
- 250 grams vegetable shortenings
- 1 kg confectioner’s sugar
- 2 oz. egg whites (or whites of two eggs)
- 1 tbsp vanilla extract
- 2 tsp lemon juice (optional)
Step 1- Combine sugar, shortening and butter in a mixing bowl. Mix slowly until they are fully mixed and form cream.
Step 2- Now add egg whites, vanilla and lemon while beating it slowly until the frosting is smooth and creamy running down the sides of bowl. You can now add few drops of colouring during doing this if you want coloured frostings.
Remember don’t beat the mixture at high speed. The recipe above will make 6 cups of frosting which is enough to frost one round 10-12 inch cake and in case of cupcakes, it can frost around 40-50 cupcakes. To make a Chocolate Frosting recipe, melt 500 grams of chocolate and let it cool. Then, during the step 2, pour chocolate into the mixture and beat. Also, you can add milk to make the mixture thin. For Cream Cheese Frosting, substitute egg whites with 250 grams of cream cheese for butter and shortening. You can also make this butter cream frosting without egg but egg will give the frosting a little bit more firmness.
