Main ingredients
- 1 egg
- 1 ¾ cups milk
- ½ cup of ricotta cheese
- 2 tablespoon melted butter
- 1 ½ cups of flour
- 3 tablespoon Baking soda
- 2 tablespoon of sugar
- ½ tablespoon salt
- ½ tablespoon vanilla
- Zest of lemon
- Fresh or frozen blueberries
- 1 cup powdered sugar
- 1 tablespoon milk

Preparation
Step1: Heat up your pan before you start. Make sure it’s hot before you start cooking pancakes.
Step2: Beat together egg, milk, ricotta cheese, lemon zest, vanilla and melted butter in large measuring cup.
Step3: Whisk flour, baking powder and salt in another bowl. Gradually add the wet mixture to it. Let it sit for 5 minutes. It will puff up, if too thick then add milk to it.
Step4: Add generous amount of butter and lower the heat to medium temperature. Spoon large circles of the batter on the pan. Cook for few minutes, add blueberries to each pancake and flip, cook the other side for few minutes. Cook until the bubbles stop popping and reforming on the raw side of the dough before flipping.
Step5: Whisk together the lemon juice, powdered sugar and milk in a bowl. If it’s too thin add more sugar, if too thick add more milk and slightly heat up. Drizzle the syrup over pancakes and serve.
Keep the pancakes warm at 200 degree in an oven while making the other pancakes. You can also freeze the leftover on a larger baking sheet. Once they are frozen pack them in a large zip lock bag. They taste super great when reheated in toaster.
